Zucchini & Corn Fritters
Serves 12
Ingredients
1 ½ cups wholemeal SR flour
1 cup milk
2 eggs lightly whisked
1 tin of 450g corn kernals
1 large zucchini, grated
½ cup grated cheese
2 tbsp olive oil
Method
Sift flour into a large bowl. Whisk milk and eggs in a jug until just combined. Add flour and stir until smooth.
Add corn, cheese and zucchini. Stir until well combined.
Heat oil over a medium heat until hot.
Using ¼ cup of mixture per fritter, spoon mixture into pan. Cook for 3-4 minutes on each side.
Serve with greek yoghurt or tzatziki.
