Zucchini & Corn Fritters

Serves 12

Ingredients

  • 1 ½ cups wholemeal SR flour 

  • 1 cup milk 

  • 2 eggs lightly whisked 

  • 1 tin of 450g corn kernals 

  • 1 large zucchini, grated

  • ½ cup grated cheese 

  • 2 tbsp olive oil

Method

  1. Sift flour into a large bowl. Whisk milk and eggs in a jug until just combined. Add flour and stir until smooth. 

  2. Add corn, cheese and zucchini. Stir until well combined. 

  3. Heat oil over a medium heat until hot.

  4. Using ¼ cup of mixture per fritter, spoon mixture into pan. Cook for 3-4 minutes on each side.

  5. Serve with greek yoghurt or tzatziki.
